ALBADORO ITALIAN PASTA - RISONI 1x500g
Risoni (pronounced ree-soh-nee) looks like large grains of rice but is actually a type of pasta. It’s also known as risi (which is Italian for rice) or pasta a riso, and is sometimes referred to as orzo, although this tends to be slightly larger.
What is risoni made of?
Like most dried pasta, risoni is made from a mixture of durum flour, semolina and water, which is kneaded into a dough before being rolled flat and shaped. The result is a creamy coloured, oval-shaped pasta with distinctive pointed ends.
How to cook risoni?
Although risoni is classified as a soup pasta, it’s also great in salads and stews. For a simple salad, combine cooked risoni with olive oil, garlic, fresh lemon juice, chopped tomatoes, basil and pine nuts, then sprinkle with parmesan to serve.
Alternatively, try stuffing eggplant or capsicum with cooked risoni, zucchini, semi-dried tomatoes and fresh herbs, and bake in the oven.
You don’t need to cook risoni when including it in soups or stews – simply add it to the saucepan eight to 10 minutes before the dish has finished cooking. When using it in salads and other dishes, cook in a saucepan of salted boiling water for eight to 10 minutes or until al dente.
The Italian company Albadoro produces high quality pasta from durum wheat. Their pasta is used for both, traditional recipes and restaurant dishes.
