Psyllium husk powder is a binder used in gluten-free bread baking to simulate the elastic gas-trapping properties of gluten. If used correctly, it will result in a gluten-free loaf that is similar in texture to a normal loaf of bread. We suggest using 4-5g of Psyllium husk powder per 100g of gluten-free flour. This Psyllium husk has been ground into a fine powder that works best in bread.
